Aguja del Fraile is comprised of old vine Garnacha, with a small addition of Cariñena, from several small, high-elevation parcels planted on sandy granite soils in the village of Cadalso de Los Vidrios. The grapes are hand-harvested, whole-cluster cold macerated, wild yeast fermented with 100% whole clusters and 21-40 days maceration depending on the parcel. The wine is then raised in 300L & 500L French & Austrian oak barrels for 14-15 months, and bottled with a light fining and without filtration. This is a bright and complex single village red, showing purity of fruit and texture that is a trademark of Cadalso wines.


The greatness of Garnacha is never realised as well anywhere as in Gredos. Head West from Madrid and you'll find yourself in the high altitudes of the Sierra de Gredos. Clusters of very old bush vines dot its hillsides between huge granite rocks and alpine scrub.

On these sandy, granitic slopes 4Monos (four monkeys) organic viticulture make utterly terrior-transparent wines. Garnacha and Cariñena become floral, herbaceous, lifted and crystalline - more in common with Pinot than their Southern French counterparts. Whole cluster ferments with native yeasts and large old oak ageing amplify the elegant expression of a unique place.
