WINEMAKING NOTES
Grapes were hand-picked, whole bunch pressed, racked and fermented with indigenous yeast in old barriques. Lees aged for 5 to 6 months, then bottled. Bellbird Spring vineyard practises are in compliance with the organic standards of BioGro New Zealand.

Oysters, blue cod, baked salmon, roast pork or poultry, celeriac, roasted root vegetables, lemongrass, coriander, parsley, celery, pear and quince (unsweetened).
