This 14 ha. estate based in the village of Volnay is run by the highly-respected Henri Boillot, who is making some of the most exciting wines in Burgundy at the moment. His scrupulously clean cellar and well-ordered vineyards are a revelation, and his delicious wines reflect the enormous care he puts into winemaking. The 13.5ha of vineyards owned are almost entirely Premier Cru, including a 4ha monopole Puligny Montrachet 1er Cru “Clos de la Mouchere”. In terms of absolute quality there is nothing separating the Domaine and Maison wines, which can really be considered as one. Henri is fanatical about the care of the vineyard, and this shows in the wines where the yields are kept to miniscule levels and as standard the grapes go through a rigorous triage (selection grape by grape) on the vines and in the winery. He also has special barrels made for him which are bigger than a normal barrique but smaller than the demi-muid (these special barrels are 350 litres in capacity and according to Henri Boillot this results in wines which are less marked by wood but which still allows him to use new oak safely). With his white wines, Henri Boillot is searching for natural concentration, freshness, purity, terroir definition and above all minerality. With the reds he finds power, complexity and finesse. Fabulous wines which have stunning complexity, concentration and purity.
