Prepared in South-West France, it benefits from a hatchery for reproduction and seven farms for rearing the fish to maturity after 7 to 8 years. The precious eggs are then harvested between September and March and the caviar is produced on the spot in compliance with the most stringent health regulations. Its delicate salting brings out the full expression of its long hazelnut flavour on the palate.
